Recipe- Mashed Potatoes

White potatoes get a bad wrap between being fried or loaded with fat and salt as traditional mashed potatoes are prepared. When you try this version you will love the taste, health and save 100′s of calories.  The secret ingredients are vegetable broth and truffle infused olive oil.

Benefits of Potaoes: Low calorie, good source of vitamin C, a good source of vitamin B6, copper, potassium, manganese, and dietary fiber.

Calories: 1 medium potato = 160 calories. Turn that same potato into french fries and it’s 539 calories.  As prepared below, about 100 calories per 1/2 cup

Ingredients (feeds 4)

  • 3 medium white potatoes
  • 1 large container fat free low sodium vegetable broth
  • 1 tsp truffle infused olive oil
  • salt and white pepper to taste
  • optional- roasted garlic

Directions

Wash and peel the potatoes, cut into 1 inch pieces and place in a large pot with the vegetable broth and bring to a boil. Add water if necessary to cover potatoes.  Cook until potatoes are tender, about 10 minutes.  Drain and reserve the vegetable broth. Place the potatoes in a bowl, add 1/2 cup of broth, olive oil and salt and pepper. Mash the potatoes and add broth as needed to obtain the desired consistency.  I like mine smooth and a little silky.  Serve immediately.  Bon Appetit

Serving suggestion: Serve with oven fried chicken and braised kale
