I recently posted the good news about how you can eat cookies and be healthy too here. Several club members asked for the whole wheat chocolate chip recipe I mentioned. Club member and blogger, Alison, graciously shares her recipe with the us below, that gets the deliciousness seal of approval from her two young sous chefs (her children). Enjoy
Whole Wheat Dark Chocolate Chip Cookies
– 2 sticks unsalted butter, melted (you can put in bowl and melt in microwave for 30 – 45 seconds)
– 2 eggs
– 3/4 cup brown sugar
– 1/2 cup white sugar
– 2 tsp. vanilla extract
– 2 & 1/4 cups whole wheat flour
– 1 tsp. baking soda
– 1/2 tsp. cinnamon
– 12 oz (one large package) dark chocolate chips
Preheat oven to 375. Combine melted butter, eggs, brown sugar, white sugar and vanilla extract. Add whole wheat flour, baking soda and cinnamon and mix thoroughly. Add the dark chocolate chips and mix everything together. Drop by rounded spoonfuls onto ungreased cookie sheet. Bake at 375 for 9 – 10 minutes. Let cool on wire rack. Yields approximately 45 cookies.
Variation: Dark Chocolate Oatmeal Cookies
Follow recipe above, but reduce whole wheat flour to 1 cup, and add 1 & 1/2 cups unflavored oatmeal (we prefer the Trader Joe’s Steel Cut ones).
