Recipe: Baked Wild Cod Fish

 

Every once in a while I crave traditional fish n chips made with fresh cod and lightly fried. But that’s not the only way you can enjoy a delicious, flaky fillet of cod. I tried this recipe recently that the family gave a thumbs up to.  I served it with brown rice with beans and stewed tomatoes and roasted garlic cauliflower.

Health Benefits or Cod: A mild tasting cold water fish that’s a great source of low calorie protein,  omega-3 fatty acids, vitamins B12 & B6, and fights atherosclerosis and diabetic heart disease.  Buying wild Cod assures maximum omega 3 benefit.

Nutriton: As prepared- 4 oz = 150 cals

Ingredients:

  • Fresh wild cod
  • Ginger soy dressing (or your favorite salad dressing or marinade)

Recipe:

Marinate cod in dressing or marinade for 30 minutes. Bake in a 350 oven for 20 to 30 minutes on a baking sheet. Remove when easy to flake with a fork and serve immediately.
