To me, there’s nothing much worse than airport food, except airline food. That’s why I eat before I get to the airport, see below, and bring snacks on board.
I did try United’s Tapas Box recently, and aside from the preservatives and mediocre ingredients, I did enjoy some decent hummus, and crackers without HFCS. I recommend it in a pinch but avoid the cheese, (processed).
My early dinner, before arriving at the airport- Ahi Tune, broccoli raab and brussel sprouts from a little road side joint in NJ, known for local fare, The Filling Station.
