Recipe: Apple Cider Vinaigrette Dressing

Apples are best in the fall, and that’s when I recommend this dressing.  I serve it over a fall greens salad with apples from the farm, and carrots from the garden, and another variation with cranberries and sunflower seeds

What You’ll Need

Apple cider vinegar, 4 tbsp

Shallot or red onion, 2 tbsp, chopped fine

Olive oil, extra virgin, 2 tbsp

Maple syrup, 1 tbsp

Dijon mustard, 1 tbsp

Sea salt & pepper to taste

How To Prepare

Chop the shallot or onion and toss in a bowl with the vinegar, maple syrup, and mustard and stir.  Slowly pour in the olive oil while whisking.  Serve over greens salad.
