Simple shish kebab recipe, with a delicious twist

My assistant chefs and I tried this variation on shish kebab in the 5 Minutes to Fitness+ test kitchen. We used fresh chicken sausage instead of lamb. They loved it so it passes the “kid” test! Remember, let them help and ignore the mess and imperfections while enjoying the smile on their faces :-)

Ingredients:

  • 4 links fresh chicken sausage (most food stores will carry this product)
  • 3 sweet peppers (orange, green, red)
  • 1 large red onion
  • seasonings- salt, pepper, olive oil, lemon juice, dried parsley to taste
  • 4 skewers

Recipe:  Cut chicken into cubes and vegetables into 1 inch squares. Place everything in a bowl and toss with seasonings. Place ingredients on skewers alternating meet and vegetables. Grill over medium heat for 10 minutes while rotating skewer 1/4 turn every few minutes. Take off grill, drizzle with olive oil & lemon juice and serve over brown rice or whole wheat couscous. Oh yea, keep track of who’s skewer is who’s otherwise you might have a minor melt down like we did :-)

Childhood obesity- and here’s the bad news in case you didn’t know

I recently blogged about the best reason to get healthy and it was all about doing it for the children in our lives. You can see it here .

A friend just sent the graph above to me.  It indicates the 1 out 3 children in the US are obese or overweight. This is an excerpt:

“The report also includes obesity rates among youths ages 10-17, and the results of a new poll on childhood obesity conducted by Greenberg Quinlan Rosner Research and American Viewpoint. The poll shows that 80 percent of Americans recognize that childhood obesity is a significant and growing challenge for the country, and 50 percent of Americans believe childhood obesity is such an important issue that we need to invest more to prevent it immediately. The survey also found that 84 percent of parents believe their children are at a healthy weight, but research shows nearly one-third of children and teens are obese or overweight. Obesity rates among youths ages 10-17 from the 2007 National Survey of Children’s Health (NSCH) also were included in the 2009 F as in Fat report. Data collection for the next NSCH will begin in 2011. Currently, more than 12 million children and adolescents are considered obese.”

I do my 5 Minutes to Fitness+ workout in front of my kids as much as possible, like this morning.  Why?  It’s obvious when you look at the picture above. They are intrigued, ask questions and always try to copy my moves.  It’s my opportunity to answer questions from my 2 1/2 year old like, “Daddy, why you do that?”.  I can reply, “Because I love you more than anything and want to be healthy so we can do great things together!

My main reason for being healthy? To be the best role model for my kids. To give them the opportunities and knowledge I  never had. Oh, and looking good in jeans is pretty cool too :-) Bonus!

Include the children in your life in your health quest. Share  this gift with them. Have fun.
