Here’s another way to prepare kale that is fast and healthy. I served it as a side dish to grilled chicken and roasted butternut squash.

Club member Elizabeth told me about her favorite dish one day. After I discretely wiped my drool, I asked her how to make it. The variations are endless, one included corn, artichoke hearts & red peppers. I prepared a version last night after a long week. The kids had already eaten so they hovered around, patient like lions at a wildebeest watering hole, then pounced on the finished product. You can say it was a hit by the picture below. Any way you can jazz up veggies so the kids, and even you will eat them is worth exploring. The anti-inflammatory, antioxidant and cardiovascular benefit of cauliflower is worth the effort. You can do this dish in a foil or parchment wrap. You can also throw it on the grill in addition to roasting in the oven, but either way, the result is buttery, delicious cauliflower. more »

My daughter doesn’t like tomatoes and it breaks my heart. I love tomatoes. I say, “Emma, look at this beautiful fruit, (yes, it’s a fruit), taste the freshness and appreciate the way it forms the base of simple, yet satisfying condiment like salsa. That usually doesn’t work. Then I say, “Wow, these tortilla chips are amazing”. That gets her.
Here is a fast and simple salsa recipe that you can whip together in 5 minutes and dip anything from chips, crackers and veggies in. The secret is ripe tomatoes and good quality olive oil and there are countless variations. more »

I was at a friends house for dinner one night when I saw him preparing a dish out of the corner of my eye while I talked with other friends. I grew up sandwiches. I don’t say this lightly. I would turn anything into a sandwich by slapping it between two dense pieces of white bread from steak to spaghetti & meatballs to mayonnaise sandwiches. Yep, just mayo. A client recently shared one of her homemade muffins with me. I think she was trying to sweeten me up so I’d take it easy on her
It worked. This was one of the best homemade “healthy” muffins I ever tried and at 14 grams of sugar per muffin compared to the 30+ grams of typical muffins, it is a healthier option for us and the kids. more »

My friend’s mom makes the most tender and flavorful classic sausage and peppers I’ve ever had. I love the dish but don’t always want to serve my family such a high fat meal so here is my healthy variation that still has great taste while increasing nutrition and decreasing calories. The last time I made it I served it over pre-made frozen brown rice that I microwaved. You can also serve it in crusty whole wheat Portuguese rolls. The secret is not to overcook the sausage and slice it very thin after browning. more »

A club member told me about this harvest grain blend from Traders Joe’s and my family loved it. Just 15 minutes to make, throw in some defrosted turkey meatballs and parmesan cheese and you have a healthy meal everyone should give the thumbs up to.
