Club member Elizabeth told me about her favorite dish one day. After I discretely wiped my drool, I asked her how to make it. The variations are endless, one included corn, artichoke hearts & red peppers.  I prepared a version last night after a long week. The kids had already eaten so they hovered around, patient like lions at a wildebeest watering hole, then pounced on the finished product. You can say it was a hit by the picture below. Any way you can jazz up veggies so the kids, and even you will eat them is worth exploring.  The anti-inflammatory, antioxidant and cardiovascular benefit of cauliflower is worth the effort.  You can do this dish in a foil or parchment wrap. My daughter doesn’t like tomatoes and it breaks my heart.  I love tomatoes.  I say, “Emma, look at this beautiful fruit, (yes, it’s a fruit), taste the freshness and appreciate the way it forms the base of simple, yet satisfying condiment like salsa.  That usually doesn’t work. Then I say, “Wow, these tortilla chips are amazing”. That gets her.

Here is a fast and simple salsa recipe that you can whip together in 5 minutes and dip anything from chips, crackers and veggies in. The secret is ripe tomatoes and good quality olive oil and there are countless variations. more »

I was at a friends house for dinner one night when I saw him preparing a dish out of the corner of my eye while I talked with other friends.  When it came to the table I loved the sweet, tender butternut squash he had simply prepared.  Here is my version. A client recently shared one of her homemade muffins with me. I think she was trying to sweeten me up so I’d take it easy on her :-)  It worked. My friend’s mom makes the most tender and flavorful classic sausage and peppers I’ve ever had.   I love the dish but don’t always want to serve my family such a high fat meal so here is my healthy variation that still has great taste while increasing nutrition and decreasing calories.  The last time I made it I served it over pre-made frozen brown rice that I microwaved. You can also serve it in crusty whole wheat Portuguese rolls. The secret is not to overcook the sausage and slice it very thin after browning. more »
