<p>Any way you can jazz up veggies so the kids, and even you will eat them is worth exploring.  The anti-inflammatory, antioxidant and cardiovascular benefit of cauliflower is worth the effort.  You can do this dish in a foil or parchment wrap. You can also throw it on the grill in addition to roasting in the oven, but either way, the result is buttery, delicious cauliflower.  <span id="more-6398"></span></p>
<p>Nutriton: 1 cup raw cauliflower = 25 cals. As prepared in this dish 60 cals per 1 cup serving.</p>
<p>Ingredients:</p>
<ul>
<li>1 head cauliflower</li>
<li>2 tbsp extra virgin olive oil</li>
<li>garlic powder, salt and pepper to taste</li>
</ul>
<p>Recipe:</p>
<p>Preheat oven to 350 or grill to medium.  Cut and clean cauliflower. Mix with olive oil and seasonings.  Place in foil wrap approximately 8 x 11in.  Fold in half and crimp edges to make a seal. Shake the package to mix ingredients. Place in hot oven or on grill for 30 minutes.  Turn over every 10 minutes on grill.  Remove, carefully open package while keeping face away from hot steam. Serve immediately. Bon Appetit.</p>

<p>Try this perfectly balanced all in one dish. Great for the whole family or guests.</p>

<p>Of course the ingredients should be organic, hormone/antibiotic free and fresh whenever possible.</p>
<ul>
<li>3 large chicken breasts pounded flat</li>
<li>1 head of cauliflower cut into small pieces</li>
<li>2 cups frozen, pre-cooked brown rice</li>
<li>3 tbsp whole wheat flour</li>
<li>1 large can plum tomatoes</li>
<li>1 small red onion chopped</li>
<li>1 clove garlic chopped</li>
<li>1/2 lemon</li>
<li>several tbsp olive oil</li>
<li>oregano to taste</li>
<li>parsley</li>
<li>feta cheese</li>
<li>kalamata olives</li>
<li>salt to taste</li>
</ul>
<p>Lightly coat the chicken breasts in flour and saute in a large saute pan with straight sides in olive oil, about 2 minutes on each side. Remove chicken and add red onions and garlic and cook for 5 minutes. Add plum tomatoes and their sauce (squeeze them in your hand to crush), cauliflower and juice of half a lemon and cook for 10 min.  Slice cooled chicken and place back in pan with frozen rice and cook for 15 minutes uncovered.  Serve with crumbled feta, oregano, parsley, salt and pepper to taste and drizzle with olive oil.</p>
