This is the second recipe from my recent on-site food demo. Now, I must admit I’m not a mac and cheese fan, but I have it on the authority of 2 cheese experts (my daughters) that this recipe ranks up there with the best! They won’t believe its made with whole wheat shells, skim milk, low fat cheese and no butter. The recipe below will be 275 cals per 3 oz serving. The original had 396 cals per serving. more »

You already know how great sweet potatoes are for you and the children in your life. Well here’s a way to make them fun and crispy. Cut a sweet potato into small cubes, drizzle with olive oil, sprinkle with salt and pepper and place on a cooking tray. Bake in a 400 oven until fork tender and crispy, turning over often. Enjoy!
