Talk about comfort food. Fried chicken, mashed potatoes and corn screams of comfort, but also calories. Great news! Here’s a recipe you will love while saving 700 calories.
Look at the picture above and you’ll see this oven fried chicken recipe yields crispy, sweet and moist chicken that you would swear was fried. I serve it with mashed potatoes made with truffle olive oil instead of butter and unsalted canned corn simply tossed in olive oil, salt and pepper.
- 1 chicken, cut up (organic or antiobiotic/hormone free- most supermarkets have them)
- whole wheat bread crumbs or rice crumbs (my son has wheat allergies)
- 1/4 cup dijon mustard
- 1/4 cup honey
- salt and pepper to taste
- extra virgin (cold pressed) olive oil
Preheat oven to 375°. Sprinkle salt and pepper over chicken. Mix mustard and honey in large bowl. Pour bread crumbs in another large bowl. Dip chicken in honey mustard mix until well covered, then dredge in bread crumbs. Place chicken in large pyrex baking dish with bottom rubbed with olive oil. Drizzle olive oil over chicken and place in oven. Cook for about an hour checking often. You don’t have to turn the chicken over unless it’s getting too browned. Bon appetit!
Bonus tip- You can also use an emulsion of balsamic vinegar and olive oil to coat the chicken.
