In a pinch for a fast, healthy meal that actually tastes good, doesn’t cost a fortune and will take you a few minutes to prepare after a long busy day? Try this (I made it last night):
- Rotisserie Chicken (pre-cooked and hormone, antibiotic free, many supermarkets have them)
- Broccoli Rabe (you can also buy other pre-cooked greens like spinach or other veggies)
- Greek Horiatiki Salad (tomatoes, cucumber, onion, olives, feta cheese, olive oil, red wine vinegar and dried parsley, oregano and dill)
