We had some leftover ingredients from a BBQ, so I made some flat bread pizzas that took 5 minutes to assemble, and about 5 minutes to cook. Delicious and versatile, this one is Greek style, but I also made one with caramelized onions and goat cheese and one with fresh figs, roquefort cheese and prosciutto. Use your favorite ingredients.
And of course, try to buy organic when you can.

- 1 flat bread (I used lavash rectangular bread)
- 1 large tomato, chopped
- 1 oz or more of good quality Feta cheese, crumbled by hand
- olive oil
- red wine vinegar
- salt & pepper to taste
- fresh herbs- oregano, parsley, dill, & basil, chopped
Preheat oven to 450 or grill to medium high. Place tomatoes, feta, capers, herbs, olive oil and red wine vinegar on flatbread and cook for 5 – 7 minutes or until bread is crispy. Watch it, it can burn quickly. Cut into squares and serve. Bon appetit!
