Recipe – Garlic, Lime, Cilantro Bean Salad
If you study the healthiest people in the world, and look at what they eat, you’ll see one food on their plates, often – beans. Use your favorite canned or dried beans in this dish, and be generous with the cilantro. I like to crush the garlic because it imparts more flavor.
Makes 6-7 servings
What you’ll need
cannellini beans, fresh or canned, 15 ounces (can) or 2 cups
black beans, fresh or canned, 15 ounces (can) or 2 cups
yellow pepper, 1/2, diced
onion, red or white, 1/2, diced
garlic, 2-3 cloves, chopped
cilantro, fresh, large handful, chopped
lime, juice of 1 or 2 to taste
olive oil, extra virgin, 2-3 tablespoons
sea salt and pepper to taste
To prepare
- Open, drain, and rinse the beans. Toss into a large bowl. If using dried beans, follow soaking and cooking instructions.
- Dice or chop the vegetables and cilantro and add to the beans.
- Squeeze the lime juice, season, cover and let sit for 10 minutes, to several hours. I like to serve it at room temperature, or slightly chilled. Bon Appetit!
